Quick Alu Tama (Potatoes with Bamboo Shoots)  

Alu Tama (Potatoes with Bamboo Shoots)

1 cup bamboo shoots
1.5 cup potatoes
1 cup black-eyed peas, soaked overnight
½ cup tomatoes, chopped
½ cup onions, chopped
1 teaspoon cumin powder
½ teaspoon turmeric
1 tablespoons oil
Salt to taste


1 Boil potatoes until half done. Cool it. Cut into 1/2 inch cubes.
2 Heat oil in medium heat.Carefully sauté onions until light brown. Add all spices and salt.
3 Add beans, bamboo shoots, potatoes. Sauté for few more minutes in low-medium heat. Add tomatoes.
4 Put water and start boiling.Simmer for 15 minutes under low heat or more until potatoes and beans are tender.

A quick and simple way to make Alu Tama (Potato Bamboo Shoots), a unique and classic Nepali dish, is given here. Alu Tama is a unique vegetable because unlike any other Indian or South Asian curry it uses bamboo shoots.Similarly, unlike other East Asian cuisine such as Chinese that uses Bamboo shoots but do not use curry spices.
